Passing a head of cauliflower in the produce section never made me think, “Hmm, I should pick this up so I can bake a chocolate cake!” But during my most recent visit to the grocery store, I did just that. After seeing this recipe on PopSugar, I picked up a head of cauliflower with the intention of using a good portion of it in a chocolate cake with peanut butter frosting.
More than anything, I was just intrigued by the idea of using the white and crunchy veggie and turning it into something sweet. And while I’m not really a huge fan of cauliflower, I thought this recipe could change that. I just had to find out.
First, I gathered my ingredients.
Instead of the vegan chocolate chips recommended in the recipe, I used Ghirardelli Semi-Sweet Chocolate Chips.
Then, I got to work on the frosting, which is a creamy peanut butter spread.
I mixed all the necessary ingredients together in a medium-sized mixing bowl and got the glorious concoction you see above.
As far as baking the cake goes, it didn’t take too much time. After preheating the oven and prepping my cake pan, I began pulling together all of the cake ingredients. I threw almond milk and apple cider vinegar into my food processor and, after mixing it up, left it there to curdle.
Meanwhile, I mixed up my dry ingredients, then dropped the cauliflower (the star of our recipe!) and the other wet ingredients into the food processor with the curdled mixture waiting there:
After blending it all together, I poured the mixture into a mixing bowl and added the dry ingredients, along with three tablespoons of chocolate chips. Then I poured it all into my pre-prepared cake pan:
Then it went into the oven! After 30 minutes, I allowed the cake to cool before icing it and topping the cake with chocolate chips.
So, looking at it, the chocolate cauliflower cake doesn’t necessarily look unappetizing. It looks like any ordinary cake, right? And being the first one to taste test it, I’d have to say, it’s really not bad. I felt that there was a slight hint of cauliflower taste afterward, but it wasn’t enough to deter me from eating more.
Just to be sure, I wanted others to sample a piece and let me know what they thought.
Thankfully, they all trusted me enough to try it, as you can see in this video I posted to YouTube.
The overall consensus was that the cake is actually good! It was even approved by my 6-year-old son, who is an extremely picky eater. I just didn’t reveal to him the cake’s secret ingredient.
If nothing else, at least this recipe for chocolate cauliflower cake is a creative way to get your kids to eat their veggies, right?
