I am taking action to help you feed your entire family a tasty and healthy chicken dinner for under ten dollars.
This week chicken thighs, drumsticks and leg quarters are on sale at Winn-Dixie for just 99 cents a pound with the store's Plenti Rewards card. There is a buy one, get one free deal on Kraft Barbeque sauce and sweet potatoes are on sale for 79 cents a pound.
Using those ingredients, you can serve up a great meal using a pineapple ginger glaze recipe I got from the Locale Market in St. Petersburg.
Here are the ingredients you need:
- 8 oz. crushed pineapple
- ½ cup dark brown sugar
- 1 lime, zested and juiced
- 2 T. Dijon mustard
- 1 T. soy sauce
- 1 small knob ginger, grated
- 1 garlic clove, grated
- Pinch of crushed red pepper
Combine all ingredients into a small sauce pan. Simmer on medium heat about 15 to 20 minutes until it will coat the back of a spoon. Keep warm until ready. Layer generously on meat, but leave some in the pot as extra when meat is done.
If pineapple or ginger is not your thing, you can coat the chicken using a bottle of bourbon chicken marinade, barbeque sauce or a lemon pepper glaze.
The glaze is extremely easy to make. Just take some lemon pepper seasoning, mix it with melted butter and a dash of Pete's Hot Sauce.

Here are the ingredients you need to make the Parmesan asparagus:
- 1½ bundles of asparagus
- Olive oil
- salt
- pepper
- 1 lemon
- shredded Parmesan cheese
- 1 clove of garlic
Coat the asparagus with olive oil. Season with salt and pepper. Pour over the juice of one lemon. Sprinkle with fresh shredded Parmesan cheese and minced garlic. Bake it at 400 degree for fifteen minutes until the cheese is crispy.

Here are the ingredients you need to make the sweet potato chips:
- 1 extra large sweet potato
- 1 T. brown sugar
- 1 T. honey
- ¼ tsp. cinnamon
- 2 T. butter
Slice the sweet potato to ½ half wide pieces. Mix together and melt the brown sugar, honey, cinnamon and butter. Coat the sweet potatoes. Cook at 350 degrees until the potatoes are tender.
