Locale Market Lobster Roll: Yield 2 each
8 oz cooked lobster meat, medium dice
2 ea brioche hot dog buns
½ cup tartar sauce
1 oz red onion, small dice
1 oz celery, small dice
2 oz butter softened
1 sprig tarragon
S&P to taste
- Butter both sides of your brioche bun and toast over medium high heat until golden brown.
- Combine lobster meat, tartar sauce, red onion, and celery in a medium sized mixing bowl and season to taste.
- Spoon the lobster meat equally into the two brioche buns.
- Garnish with torn tarragon and serve.
Locale Market Tartar Sauce: Yield ½ cup
4 oz mayonnaise
1 T dill, chopped
½ T capers, chopped
½ T cornichons, chopped
½ T parsley, chopped
½ T chives, chopped
1 t tarragon, chopped
1 t lemon juice
