Creative Culinary Director, Frank Anderson of The Rez Grill, and Chef James Petrakis of the The Ravenous Pig To Curate One-Night Only Six-Course Specialty Menu on Tuesday, December 4 at The Rez Grill.
The six-course pork-themed menu will be accompanied by wine pairings and will feature three dishes prepared by each chef. Chef Anderson will please palates with Stracciatella Cheese with Benton’s Country Ham, Burnt Honey, Pistachio Powder; Braised Pork Agnolotti with Lemon Brown Butter, Parmesan and Sage; and Frito Pie with Pork Chili, Dirty Cheese, Pickled Jalapeño and Cilantro.
Talking Point #4: Chef Petrakis will serve Tete de Cochon Brûlée with Beets, Joyce’s Mustard, Shallot and Frisée; Roasted Palmetto Creek Pork Loin with Gnocchi, Pumpkin, and Apple Butter; and commence with an indulgent dessert of Tahini Tres Leches with Cardamom Cake, Grapefruit, Larded Toffee, and Chai Meringue.
