Crab Cakes Recipe
.75lbs 41/50 Shrimp, ½” diced and cooked
.75lbs Jumbo Lump Blue Crab Meat
1.25 cups Imperial Sauce
3.25 ounces Panko Bread Crumbs
(Yields 2.25lbs mix)
Weigh out 1.5 oz mix and ball and mold into crab cake shape
Fry for 2 minutes in 350-degree oil

Imperial Sauce
2lbs Mayonnaise
4ea Egg Yolks
3.25oz (weight) Spicy Brown Mustard
3/8 oz (weight) Old Bay Seasoning
½ Cup Lemon Juice
½ tbsp Worcestershire Sauce
½ tbsp Hot Sauce
Combine all ingredients and mix well

Hollandaise Sauce
Hollandaise Sauce Mix
Butter
Milk

Spinach
2 Cups Spinach
5 Thin Garlic Pieces
½ oz pomace oil
Sautee garlic in oil to light brown. Add spinach with a pinch of salt and pepper. Toss spinach while cooking.
