If you live a ketogenic or low-carb lifestyle, you might feel left out when you see people enjoying seasonal goodies. Registered dietician Dr. Rachel Paul suggests looking for delicious recipes that make it possible to enjoy healthier versions of some favorite treats.

“With the stress of the pandemic, it’s been easy to put on some pounds,” acknowledges Dr. Paul. “I recommend following the Atkins low carb approach to make healthy choices, swaps, and lose weight. Eating low carb doesn’t mean sacrificing delicious foods — it’s all about selecting better-for-you foods.”

One versatile food that has become wildly popular in the keto/low-carb community is the chaffle. A portmanteau of “cheese” and “waffle,” basic chaffles are primarily a combination of egg and cheese made on a mini waffle maker to be used in place of bread or buns, or eaten as breakfast. Creative foodies have transformed chaffles into numerous sweet and savory recipes.

If you feel like you’re missing out on all of the pumpkin spice treats that are everywhere during autumn, Atkins has a pumpkin spice chaffle that fits the bill. It’s low carb, keto-friendly, gluten-free, and even peanut- and tree nut-free.

“Instead of a breakfast high in flour and carbohydrates, try this low carb chaffle alternative,” Dr. Paul suggests. “Eating low carb causes your metabolism to burn fat for fuel, instead of carbs and sugar.”

To make the chaffle, you need some shredded mozzarella, an egg, some canned pumpkin (make sure it’s pure pumpkin puree, not pumpkin pie filling, which has sugar!), sugar-free maple syrup, coconut flour, pumpkin pie spice and baking powder.

After mixing the ingredients, pour them into your waffle maker and wait. While mini waffle makers work great, you can use a traditional waffle maker, as well. When it’s hot, golden and crisp, you can dig into your delicious fall chaffle.
