Perfectly Grilled Peaches

TAMPA, FL -- My wife wants me to eat more fruit. Well, if I can grill it, cover it in sugar and top it off with ice cream, her wish is granted!

That's how I came up with my Perfectly Grilled Peaches.

Ingredients:
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
Pinch of nutmeg
4 fresh peaches
vegetable oil
vanilla ice cream

Preparation:
In a small bowl, combine brown sugar, nutmeg and cinnamon. Cut peaches along the seam all the way around and twist halves off the pit. Brush cut sides with vegetable oil. Cook the peaches, cut side down on a hot grill until the fruit has grill marks. That should take between 3 to 4 minutes.

Brush tops with oil, turn over, and move to indirect heat. Sprinkle cut sides with cinnamon sugar.

Cover the grill and cook until the sugar is melted and fruit is tender. That should take about 10 to 15 minutes.

Serve with vanilla ice cream and sprinkle on extra cinnamon sugar if you like.
