Leftover Turkey and Cranberry Quesadillas
Makes 4 Quesadillas
Ingredients
4 8" flour tortillas
2 Cups shredded turkey
1 Cup cranberry sauce
Provolone cheese
Vegetable oil for frying
1/2 Cup turkey gravy warmed
Lay the tortillas on a work surface. Sprinkle the turkey evenly among the tortillas onto 1/2 of the tortilla. Cover with cranberry sauce and cheese also dividing the mixture evenly among the tortillas. Fold the unfilled half over the filling.
Heat a large sauce pan over medium heat. Add enough oil to lightly coat the bottom of the pan. Place the tortillas carefully into the pan and cook, turning once until lightly browned on each side.
Remove the quesadillas to a paper towel lined sheet pan to drain. Cut the quesadillas into quarters and serve with turkey gravy on the side for dipping.
