The first of its kind -- in the country -- The Flying Pan is a Creperie concept that could just take off.
"We are really trying to be a neighborhood cafe that is European-inspired," said Laurent Corgnet, who has presided over the re-hab of the former Bin 27 Wine Bar. "We serve a unique array of French-inspired food, but with an international twist."
Setting up shop on the competitive Kennedy Blvd. corridor, this homey, relaxed restaurant specializes in those thin pancakes for sure, with made-as-you-order freshness in dishes both savory and sweet.
We soon discovered that the sweet Nutella Crepe was Ashley's favorite, but since this is breakfast sandwich Sunday, Laurent showed off his between two-slices offering.
"It's called a Croque Madame," he said proudly. "This one's made with turkey, but it can be made with ham, its Bechamel sauce (white sauce) Monterey Jack cheese and layered..."
And it was clear that John was the big fan of this one.
Finally, it was my turn to put down the camera and get my grub on... with a healthful dish
"This is called a Fruity Muesli," said Laurent, pointing out the low-fat vanilla yogurt, granola, and then fresh fruits. "Banana strawberry and berries..."
It's all good... and we left as members of the "clean-plate-club!"
