Ricotta Fruit Pie recipe

Recipe for Ricotta Fruit Pie

Cook time: 45 minutes
Serves: 8-10 (2 tarts)  

16 oz. ricotta
¾ cup cream
1 ¼ cups sugar
4 eggs
Zest of 1 orange
2 Tablespoons lemon juice
Colorful assorted fruit (i.e. grapes, sliced mango, sliced strawberries, blueberries, raspberries, etc.)
2 store-bought graham cracker crusts

1.    Combine first six ingredients in a bowl and mix well.
2.    Pour the ricotta mixture into the graham cracker shells.
3.    Bake in a 350° F oven for about 45 minutes, or until the center has solidified.
4.    Remove from oven and let cool. When cool, place in the refrigerator until needed.
5.    When ready to serve, arrange fresh fruit on top of the tart.
