Recipe: Grilled Pineapple Salsa

Recipe for Grilled Pineapple Salsa

Cook time: 10 minutes
Serves: 3 cups

12 oz. pineapple (about ½ of a fresh pineapple)
1 Tablespoon jalapeno chile (about ½ jalapeno chile)
1 medium red onion, peeled, and cut into ¼" slices
1 teaspoon lime zest
1 Tablespoon lime juice
1 cup diced ripe tomatoes
¾ cup roughly chopped cilantro leaves
2 Tablespoons orange juice
1 teaspoon salt
1 Tablespoon olive oil

1.    On a hot grill, grill pineapple, jalapeno and red onion until lightly charred and softened.
2.    Remove from the grill and let cool.  Dice pineapple, jalapeno and red onion and place in a mixing bowl.
3.    Add remaining ingredients and stir until combined.  It can be served immediately or stored in the refrigerator for several days.
