Recipe for Grilled Fish with Black Olive Relish

Serves: 4

4 - 6 oz. firm-fleshed fish fillets
1 ½ teaspoons Italian herb blend
¼ teaspoon ground coriander
½ teaspoon salt
½ teaspoon ground black pepper
1 T. extra virgin olive oil
3 oz. Pitted and chopped Kalamata olives
3 T. extra virgin olive oil
Juice of 1 lemon
1 clove minced garlic
2 T. chopped parsley
½ t. dried marjoram
1.    Combine Italian herb blend, coriander, salt and pepper.  Sprinkle the spice mix on the fish.  Rub with 1 Tablespoon of olive oil.  
2.    Mix olives, 3 Tablespoons olive oil, lemon juice, garlic, parsley, and marjoram together in a small bowl.   
3.    Grill fish over high heat until it is cooked through, but still moist.
4.    When done, remove fish from grill and top with olive relish.
