¼ cup water
½ cup heavy cream
1/3 cup minced fresh mint leaves
¼ cup sugar
¼ cup cocoa powder
2 oz. high quality semi-sweet chocolate, chopped
1 Tablespoon softened butter
1. In a small saucepan, bring water, heavy cream, and mint to a boil. Remove from heat and let steep for 30 minutes.
2. Strain out the mint leaves, being sure to press on the mint leaves in the strainer to extract the maximum amount of mint-infused cream.
3. Bring the cream back to a boil. Remove from heat and add sugar, cocoa powder, chocolate, salt, and butter. Stir to incorporate all ingredients.
4. Heat before serving.
