Mediterranean watermelon salad recipe

Recipe for Mediterranean Watermelon Salad

Prep time: 25 minutes (plus time to freeze the watermelon slices)
Cook time: 0 minutes
Serves: 6

6 ¼-inch slices of seedless watermelon (about 6 x 6)-ideally yellow watermelon to provide a nice color contrast
¾ cup diced cucumber
8 oz. fresh mozzarella, diced
1 tomato, quartered and then thinly sliced
3 Tablespoons minced red onion
¼ cup chopped fresh basil
½ teaspoon salt
¼ teaspoon ground black pepper
5 Tablespoons extra virgin olive oil
3 Tablespoons red wine vinegar

1.    Place the slices of watermelon on a baking sheet lined with plastic wrap.  Place another sheet of plastic wrap on top of the watermelon.  Put the slices in the freezer until they are completely frozen.
2.    In a large bowl, combine all the remaining ingredients.
3.    To serve, place a frozen piece of watermelon on a plate.  Top with the salad and serve.
