Recipe for Healthy Breakfast Sandwich

Cook time: 5 minutes
Serves: 2 sandwiches

1 Tablespoon extra-virgin olive oil
2 green onions, sliced very thinly
1 cup egg whites (about 8 egg whites)
¼ teaspoon salt
4 slices of whole wheat bread
1 ripe avocado, skin and pit removed
½ lemon
Tomato slices
Hot sauce

1.    In a hot sauté pan, sauté green onions in oil until softened and lightly browned.  Add egg whites and cook until they are firm.  (Stir periodically while they are cooking, but try to have it cook into a solid mass that will be easy to arrange later on a sandwich.)
2.    Toast the bread.
3.    To make a sandwich, using a fork, smash ½ of each avocado onto a hot piece of toast. Squeeze some lemon juice on top of the avocado.  Top with ½ of the egg whites, tomato slices, and your favorite hot sauce.  Place another piece of toast on top and eat.
