Recipe for Grilled Curried Shrimp
Prep time: 25 minutes (plus 3 hours marinating time)
Cook time: 10 minutes (depending on the size of the shrimp)
Serves: 6 as an appetizer, 3 as a main course
1 ½ lbs. large, raw shrimp, tail on, shelled, and deveined
¼ cup plain Greek yogurt
1 ½ Tablespoons lemon juice
2 teaspoons paprika
2 cloves garlic, finely minced
1 Tablespoon finely grated fresh ginger
½ teaspoon ground cumin
½ teaspoon ground black pepper
½ teaspoon salt
½-1 Serrano chile, finely minced (1 whole Serrano will really make it spicy!)
¼ teaspoon turmeric
½ bunch cilantro, minced
1/8 teaspoon ground coriander
1. In a bowl, combine all ingredients except the shrimp.
2. Add shrimp to the bowl and stir to coat well. Place in the refrigerator for several hours to let the flavors marinade.
3. Place the shrimp on a hot grill and cook for only a few minutes per side, being sure not to overcook them.
