Spice up your Super Bowl menu with some New Orleans flair! You don't have to be traveling to Louisiana to get a taste of Cajun this Super Bowl Sunday. Shrimp po boys, red beans and rice, and jambalaya are always crowd-pleasers. Here is the jambalaya recipe featured on ABC Action News with help from a local New Orleans-style chef Louis Robert from Second Line Cafe!
Jambalaya
Ingredients:
2 lbs. chicken, skinned, deboned, and coarsely chopped
Salt and pepper to taste
1 cup canola oil
2 lbs. smoked andouille Sausage sliced
1 lb. onion, chopped
2 bell pepper, chopped
1 cup green onion, chopped
3 cloves of minced garlic
2 lbs. rice
7 cups water
3 tablespoons Tabasco
2 teaspoons red pepper
6 beef bouillon cubes
3 tablespoons Kitchen Bouquet
Directions:
In a heavy stock pot add canola oil and sauté onions, bell pepper, garlic, andouille
sausage and chicken until onions are tender. Add rice water, hot sauce, salt, red pepper,
bouillon cubes, Kitchen Bouquet and mix well. Bring to a boil; reduce heat. Simmer,
stirring occasionally, keep covered until rice is tender.
