Recipe for Sirloin Steak:
Prep time: 15 minutes (plus marinating time)
Cook time: 8-10 minutes, depending on desired doneness and thickness of steak)
4 8-10 oz. sirloin steaks
3 minced garlic cloves
1 1/2 teaspoon minced fresh thyme
1 1/2 teaspoon minced fresh rosemary
1 1/2 teaspoon pernod (optional)
1 Tablespoon lemon juice
2 Tablespoons extra virgin olive oil
Salt and black pepper
1/2 c. coarsely chopped black kalamata olives
1 Tablespoon chopped capers
1 Tablespoon minced parsley
3 red onions, thinly sliced and sautéed in olive oil until soft (optional)
1. Combine steak, garlic, thyme, rosemary, pernod, and lemon juice in a plastic kitchen bag. Place in refrigerator and marinate for 4-12 hours.
2. Before grilling, season well with salt and pepper and rub with oil.
3. Grill steaks over high heat until desired doneness. Sprinkle with olives, capers, and parsley. Serve on a bed of sautéed red onions if desired.
