Recipe for Mediterranean Skewers:
Prep time: 15 minutes, plus 1 ½ hours marinating time
Cook time: 6-8 minutes
Serves: 8 skewers or 4 portions
8 6-inch wooden skewers, soaked in cold water for 30 minutes
1 lb. lean sirloin steak cut into 1 inch cubes (about 14 pieces)
1 each zucchini and yellow summer squash cut in half lengthwise and then cut into 1 inch pieces
2 ½ Tablespoons lemon juice
2 Tablespoons finely minced onion
2 Tablespoons extra virgin olive oil
1 teaspoon dried oregano leaf
1 teaspoon dried basil leaf
¼ teaspoon ground black pepper
1 teaspoon salt
1. Combine all ingredients except skewers in a bowl and let marinade for 1-6 hours.
2. Thread meat and squash alternatively on the skewers. Grill for about 6-10 minutes depending on the heat of the grill. Turn to brown all sides while grilling.
