Recipe for Creamy Herb Dressing:
Difficulty: Easy
Prep time: 15 minutes
Cook time: 0 minutes
Serves: 2 cups
12 oz. soft silken tofu
2 Tablespoons extra virgin olive oil
3 Tablespoons white wine vinegar
½ teaspoon salt
½ teaspoon ground black pepper
3 green onions, finely chopped
1 cup chopped assorted fresh herbs like parsley, tarragon, cilantro, basil, chervil. (Avoid strong herbs like rosemary and thyme.)
2 teaspoons Dijon mustard
Place all ingredients in a blender and process until smooth. Refrigerate until needed.
