TAMPA - Second Line Cafe shares their jambalaya recipe and Carrie Scheiner with Exploracise shares her math football that stimulates the brain and promotes physical health.

Jambalaya

2 lbs. chicken, skinned, deboned, and coarsely chopped
Salt and pepper to taste
1 cup canola oil
2 lbs. Smoked Andouille Sausage sliced
1 lb. onion, chopped
2 bell pepper, chopped
1 cup green onion, chopped
3 cloves of minced garlic
2 lbs. rice
7 cups water
3 tablespoons Tabasco
2 teaspoons red pepper
6 beef bouillon cubes
3 tablespoons Kitchen Bouquet
In a heavy stock pot add canola oil and sauté onions, bell pepper, garlic, andouille
sausage and chicken until onions are tender. Add rice water, hot sauce, salt, red pepper,
bouillon cubes, Kitchen Bouquet and mix well. Bring to a boil; reduce heat. Simmer,
stirring occasionally, keep covered until rice is tender.
